摘要: 花青素是植物中富含的一类水溶性天然色素,因其具有较高的安全性及极强的清除自由基的能力而备受学者青睐。本文主要综述花青素的结构和安全性,其在反刍动物中可能的消化代谢途径及增强机体抗氧化能力与缓解氧化应激的作用机制,探讨其作为反刍动物新型饲料添加剂的可行性。旨在为相关研究提供理论参考。

Abstract: Anthocyanins are a kind of water-soluble natural pigments rich in plants, which are favored by scholars because of their high safety and strong ability to scavenge free radicals. This paper mainly reviews the structure and safety of anthocyanins, their possible digestive and metabolic pathways in ruminants, and the mechanism of enhancing the body's antioxidant capacity and relieving oxidative stress, and discusses its feasibility as a new feed additive for ruminants. This review will provide theoretical references for related research.
